A SMALL REGIONAL COLLECTION

Nigeria
On your menu.

Try vegetable jollof rice or a peppery black-eyed pea porridge. Start with the ingredients and cooking time: one uses dry rice, the other uses already-cooked beans.

A small collection of simplified home-cooking adaptations. These dishes have regional, family, and cross-border variations; a country label is a discovery aid, not a claim of exclusive origin.

PLAN THIS PARTICULAR MEAL

Rice from scratch or beans already cooked?

The two recipes in this Nigeria collection start from different pantry states. Vegetable jollof begins with dry rice and a tomato-pepper base. The bean porridge begins with canned, cooked black-eyed peas. That distinction explains the different preparation estimates better than the photographs alone. These are small home adaptations, not a survey of Nigerian food or of jollof across West Africa.

Give the rice base time to reduce

For vegetable jollof, a blender prepares the tomato-pepper mixture and a heavy lidded pan cooks the rice. Reducing the blended base before adding rice keeps the method distinct from simply boiling rice in diluted tomato. The amount of stock remains a starting measurement: rice brands, pot width, and lid fit affect evaporation. Look for tender grains and use the resting stage.

Use the right beans for the shortcut

The bean porridge is a quicker route only because the beans are already cooked. Dried black-eyed peas are not a direct timed substitution. Soften the onion and pepper, reduce tomatoes, then warm the beans and mash a few to create body. Ingredient exclusions use named items: search for black-eyed peas rather than assuming an exclusion for chickpeas also covers them.
