Eggplant, zucchini, peppers, and tomato softened into a generous vegetable stew.
A simplified home-cooking adaptation. *Timing is an estimate; this recipe has not yet been kitchen-tested.
Is this the right meal for today?
Ratatouille gives several vegetables a shared tomato-and-herb base. The longer estimate allows the eggplant and other vegetables to become tender, rather than treating them as a fast stir-fry.
Plan the method before you start
Brown the eggplant first, then build the remaining vegetables in stages. Bread or grains are serving suggestions; choose and prepare that accompaniment separately if you want a larger main meal.

Make something good
- 01
Heat half the oil in a wide saucepan. Brown eggplant for 6–8 minutes, adding a splash of water if needed. Set aside.
- 02
Add remaining oil and soften onion and pepper for 6 minutes. Add garlic and zucchini and cook for 3 minutes.
- 03
Return eggplant to the pan. Add tomatoes and thyme, bring to a simmer, and cover loosely. Cook for 20 minutes, stirring occasionally, until all vegetables are tender.
- 04
Uncover and reduce excess liquid if needed. Stir in torn basil, season, and serve with bread or cooked grains.
