RECIPE DECISION NOTES

Is this the right meal for today?

This fish stew takes inspiration from coconut-rich moqueca associated with Bahia. It is not a description of every Brazilian moqueca; preparations from Espírito Santo differ. Large boneless fish pieces and a wide pan make it easier to keep the pieces intact. It is a seafood choice even though much of its ingredient list is vegetables.

Plan the method before you start

Prepare the vegetables while the seasoned fish stays chilled. Build the vegetable base before adding fish, then simmer gently and check the thickest piece with a food thermometer. The time range is only a guide because piece size changes cooking speed. Coconut milk and optional palm oil affect richness and color. Rice is not included in the ingredient quantities or time estimate, so plan it separately if you want it alongside.

Make something good

  1. 01

Pat fish dry, check for bones, and season with a little salt, pepper, and half the lime juice. Keep chilled while preparing vegetables.

  2. 02

Warm olive oil in a wide lidded pan. Soften onion and pepper for 7 minutes, then add garlic for 30 seconds.

  3. 03

Layer tomatoes and fish in the pan. Add coconut milk and water, cover, and simmer gently for 8–12 minutes, until fish reaches at least 63°C / 145°F in its thickest part. Avoid vigorous stirring.

  4. 04

Add optional palm oil and heat gently. Finish with cilantro and remaining lime to taste. Serve as a stew; rice is an optional extra.
