RECIPE DECISION NOTES

Is this the right meal for today?

These cheese rolls are a baking option rather than a complete dinner. We group them with bread and wraps and label them for breakfast or lunch. The small-batch adaptation uses tapioca starch and vegetarian-rennet cheese. A salad or another dish may be needed for a fuller meal; the wheel does not judge portion adequacy for your household.

Plan the method before you start

Check the packet says tapioca starch: whole cassava flour behaves differently. The hot milk-oil mixture hydrates the starch before the egg is added, so allow the mixture to cool briefly to avoid cooking the egg on contact. Dough texture varies with cheese moisture. Keep rolls similar in size and assess the inside as well as the crust; a pale exterior does not reliably indicate whether the center has set.

Make something good

  1. 01

Heat oven to 200°C / 390°F. Line a baking tray. Put tapioca starch and salt in a heatproof bowl.

  2. 02

Bring milk and oil just to a simmer in a small pan. Pour over starch and stir carefully until combined; cool for 5 minutes.

  3. 03

Beat in egg, then cheese, to form a sticky dough. With lightly oiled hands, form 8 small balls and place apart on the tray.

  4. 04

Bake for 18–22 minutes until puffed, lightly golden, and set through without wet batter. Cool briefly before eating. Serves two as a light breakfast or accompaniment.
