Is this the right meal for today?
Lentils, grains, and onions appear in mujaddara and related dishes across the Levant, with different names, textures, and grain choices. This rice-and-whole-lentil adaptation is one entry in our Lebanon collection, not an exclusive origin claim or a description of every Lebanese version. The photograph shows a related serving style.
Plan the method before you start
Brown lentils need a head start; red lentils break down and are not a like-for-like substitution. Brown the onions patiently while the lentils partly cook, reserving some for contrast at the end. When rice is added, check that both grains and lentils become tender before resting. A crisp salad would make a different texture alongside, but it is a separate recipe and is not included in these ingredient quantities.

Make something good
- 01
Simmer lentils in plenty of water for 12–15 minutes until partly tender, then drain.
- 02
Meanwhile warm oil in a wide pan. Cook onions over medium-low heat for 20–25 minutes, stirring, until golden brown. Keep a third aside for topping.
- 03
Add cumin, drained lentils, rice, and 450 ml fresh water to the onions. Bring to a simmer, cover, and cook gently for 15–20 minutes until rice and lentils are tender; add a little hot water if needed.
- 04
Rest covered off the heat for 5 minutes. Fluff, season, and top with reserved onions and lemon juice to taste.
