RECIPE DECISION NOTES

Is this the right meal for today?

Choose this soup when you want pulses and a little pasta in the same bowl. This version uses vegetable stock and red lentils; it is not a claim that all harira is vegetarian or made with these lentils. Meat, thickening methods, and family preparations differ. Its ingredient list is longer than its one-pot method might suggest.

Plan the method before you start

Prepare the onion and celery before heating the pan. Red lentils soften as they cook, so stir near the base to prevent sticking. Add vermicelli only toward the end and follow its packet time; putting it in with the lentils can make it too soft. Lemon and herbs are finishing ingredients. If you omit the noodles, that is a change to this recipe rather than something the wheel automatically accounts for.

Make something good

  1. 01

Soften onion and celery in oil for 6–7 minutes in a saucepan. Stir in ginger and cumin.

  2. 02

Add tomatoes, lentils, chickpeas, and stock. Bring to a simmer and cook for 20 minutes, stirring occasionally.

  3. 03
