Is this the right meal for today?
Basil, garlic, and a savory sauce make this a lively chicken-and-rice option. Our version uses sliced chicken and peppers, and names fish sauce explicitly rather than hiding it behind a generic stir-fry sauce.
Plan the method before you start
Prepare the vegetables and sauce ingredients before heating the pan. Thai basil and holy basil have different aromas; using one for the other is a home adaptation, not evidence that they are identical ingredients.

Make something good
- 01
Cook the rice according to its packet directions while you prepare the stir-fry ingredients.
- 02
Heat oil in a skillet over medium-high heat. Stir-fry onion and pepper for 4 minutes, then add garlic, optional chili, and sliced chicken.
- 03
Stir-fry for 5–7 minutes. Add fish sauce, soy sauce, sugar, and water; simmer until chicken reaches 74°C / 165°F.
- 04
Turn off the heat and fold in basil until wilted. Serve over rice. Holy basil gives a different flavor from Thai basil; either makes a useful home adaptation.
